Iced White Tea with Peach and Almond

Makes 4Ā¼ Cups
1/3 cup almonds
3 peaches
3 tablespoons honey
4Ā¼ cups mineral water
2 teaspoons white tea
Ā½ lemon
Heat for 15 minutes over low heat
Instructions:
Halve the almonds, pit the peaches and roughly chop them.
Place in a saucepan with the honey and the water, and heat for 15 minutes over low heat. Remove from the heat.
Off the heat, add the tea and infuse 8 minutes.
Strain the mixture through a fine-mesh sieve into a pitcher, set aside to cool, then chill.
Enjoy the iced tea with a drizzle of lemon juice.
